Blueberry Streusel Muffins

I've made this recipe a couple of times and it's wonderful. The batter is rich and creamy and the muffins turn out perfectly round and beautiful. The streusel is really unnecessary but if you use it I think you should add oatmeal or something to make it more substantial. I also tried a 50/50 mix of whole wheat and white flour and they definitely didn't have the same loft as before. They still tasted very good but they were pretty flat.

Pumpkin Pie Flan

This is a great recipe and it turned out perfectly. My mother-in-law who is Cuban raved about this and asked me to make it the next time she visits. I think it tasted like pumpkin pie without a crust and the texture was different than original flan because of the pumpkin. I prefer the creaminess of flan so I gave this recipe 4 stars.

Pumpkin Pancakes

Wow! These pancakes are seriously yummy. I made them with a 50/50 blend of white flour and wheat flour and they were delicious. I also used 1/3 the amount of brown sugar for the cider syrup and it turned out great. I think that it would be too sweet with the full amount.
